
INGREDIENTS:
Olive oil
Tomatoes
Salt
peper
Thyme
Coconut yoghurt
Sheep or goat feta
Sometimes it can be easy. In my world it usually is, easy and tasteful. Roasted tomatoes with coconut yogurt is just that.
Pour some olive oil over the tomatoes. Add salt, pepper, thyme. Place in a hot oven, or grill. When their skin breaks and they look delicious take them out of the oven.
Put the coconut yogurt on a plate, warm tomatoes on top. Add some sheep or goat feta to finish it off.
Eat it as a side dish. Or grab a good, thick slice of bread and eat it for lunch or dinner.
